- 200g of onions,
- 250g of okra (trimmed, washed and sliced),
- 1 tomato, 1 red chilli,
- 1 teaspoon of ground coriander,
- and a handful of fresh coriander to serve.
To prepare, heat onions in a wok until soft. Then, add the okra, tomatoes, and chilli, and mix well. Lower the heat and add ground coriander and cook for an extra 5-10 minutes.
Then add 1 tablespoon of water and simmer for a further five minutes.
Once cooked, sprinkle fresh coriander into the mix and serve with brown rice or a chapati.
He advises: “There’s a common misconception that vegetarian diets may easily lead to malnutrition. In most cases however, the majority of our meals are not sufficient enough to provide our body with everything it needs to truly function at its best. But as vegetarian meals can provide foods low in saturated fats and high in heart healthy, natural ingredients, they can be a great addition to our lifestyles and can decrease our risk of heart disease, improve lean body mass, and give us a feeling of satisfaction.”
