Opened in September 2012, James Wilkins and Christine Vayssade bring together many years’ experience working solely in Michelin starred establishments in London, France, Japan and Istanbul. They returned to the UK to realise their dream of owning their own restaurant and within a year of opening in Bristol they gained one Michelin star. Their philosophy is centred on offering choice and value to their customers while championing all that is local – right down to the artists who show their work in the restaurant. Inspired by their experiences and travels, their cooking style unites creative interpretations of classical flavour combinations with traditional and modern cooking techniques, while desserts are highly creative and playful.
